Spicy Sweet Potatoes
3 large sweet potatoes, peeled
2 tbsp Spanish Hojiblanca Extra Virgin Olive Oil
1 tbsp balsamic vinegar
1-2 tbsp Honey Spice Rub & Seasoning
½ tsp sea salt
¼ tsp cayenne pepper
Preheat oven to 400°. Cut sweet potatoes into 1 inch cubes. In a large bowl, add sweet potatoes, extra virgin olive oil, balsamic vinegar, Honey Spice Rub, sea salt and cayenne, tossing to coat. Transfer to a baking sheet and bake, uncovered, until potatoes are tender, about 40-45 minutes, stirring every 15 minutes. Serve warm.
