Ingredients
1 stick butter
-
2 tbps Scallion Infused Olive Oil
2 cups chopped onions
2 chopped apples
2 cups diced celery
1 cups dried cranberries
1 tbsp minced fresh sage and thyme
3 cups chicken broth

2 tbsp Cranberry Pear Balsamic
2 eggs
¼ cup chopped fresh parsley
16 cups stale sour dough bread cut into cubes
Directions
Melt 6 tbsp of butter with Scallion Infused Olive Oil.
Add onions, apples, dried cranberries, celery & sage and thyme and cook for 5 minutes.
Add 3 cups broth and Cranberry Pear Balsamic & bring to simmer.
In separate bowl, beat eggs with parsley and mix into cubed, stale bread, then pour into broth mixture.
Transfer to a large baking dish and dot with the last 2 tbsp of butter & cover with foil.
Bake at 375 for 30 minutes.
Uncover, and bake for an additional 30 minutes until golden.
