Feel like you're in the heart of Italy with our recipe for Cherry Tomato Confit Brushchetta. Simply roast tomatoes, herbs, and oil in the oven, spread on freshly sliced baguette and drizzle with our Tuscan Herb Olive Oil and Garlic Balsamic. Super quick and easy, this is the perfect dish to serve to friends or a romantic partner.
Ingredients
2 cups mixed cherry tomatoes
½ cup sunflower oil
2 sprigs fresh basil
5 cloves garlic
Fresh Baguette

2 tbsp Aurelius Tuscan Herb Fused Olive Oil

1 tbsp Aurelius Garlic Balsamic Vinegar
Directions
Cut a fresh baguette into thin slices and set aside.
In a seasoned cast iron skillet, put the cherry tomatoes, sunflower oil, fresh basil, and garlic. Roast in a preheated oven at 375 ºF for an hour or until the tomatoes burst slightly.
Remove from the oven and allow them to cool. Before serving, remove the tomatoes from the skillet and toss them in 2 tbsps of the Tuscan Herb Olive oil.
Place a few tomatoes on the slices of bread and drizzle with the garlic balsamic vinegar. Sprinkle some sea salt and enjoy this fresh snack that is reminiscent of the Tuscan sunsets
