Marinades are the best for anyone who could use a few extra minutes in their day. Simply throw a few ingredients together, toss in the fridge, and cook the next day. There's nothing to it.

1LB lamb chops

3 TBSP Scallion Infused Olive Oil

3 TBSP Balsamico Modena

1 TBSP Pink Himalayan Salt, fine

1 TSP Scallion Infused Olive Oil
1 TBSP butter
1 scallion
2 garlic cloves
1/4 CUP Italian parsley
1/4 CUP cilantro

2 TSP Balsamico Modena

1 TSP Pink Himalayan Salt, fine

1/4 CUP Scallion Infused Olive Oil
1 TSP honey
2 ice cubes
Marinated Lamb chops
Green Chimichurri
Directions
Marinated Lamb Chops
Place the lamb chops in a deep dish and add the Scallion Infused Olive Oil, Balsamico Modena and Pink Himalayan Salt. Rub the lamb chops in the marinade. Cover the lamb chops and marinate in the fridge for at least 4 hours or overnight.
Preheat your cast iron skillet on medium-high heat, add a tsp of Scallion Infused Olive Oil and a TBSP of butter, sear the lamb chops for 4-6 minutes on each side.
Set lamb chops aside and let sit for a few minutes
Green Chimichurri
Place all the ingredients in a blender and blend until you get a smooth creamy consistency. You may need to add a little bit of cold water if you want to make a looser Chimichurri.
Serve the seared lamb chops and green chimichurri with a side of creamy mashed potatoes.
