Step up your salad game with this recipe for zesty fresh salad with roasted beets. For this recipe, we've paired two of our most popular flavoured products, the Grapefruit White Balsamic with the Basil Infused Olive Oil which make for a sweet and herbaceous combination. Add to that some beets, avocado, and oranges, you have a salad you can't beet!
Ingredients
4 small red beets
1 avocado
1 clementine
1 pink grapefruit
1 navel orange
2 cups baby arugula

1 tbsp Aurelius Basil Infused Olive Oil

1 ½ tbsp Aurelius Grapefruit White Balsamic Vinegar
Directions
Preheat the oven to 350 ºF
Wrap the beets separately in aluminum foil, and roast for an hour.
Remove them from the oven and allow them to cool before peeling and slicing into thin medallions. Peel and cut the avocado into thin slices lengthwise. Supreme the clementine, grapefruit, and orange.
Layer the ingredients and drizzle the olive oil and balsamic vinegar.
