This balsamic has an complex and heavenly sweet/savoury scent, one immediately imagines what to do with it. Marinate, drizzle, sauté. Make an interesting dressing for salads. Do people make jellied salads anymore? I think of this as a perfect accompaniment to tomato aspic. I bet it would enhance a Caesar too. It’s so interesting.

Excellent herby taste
This choice of balsamic appealed to me right away as we tasted a few, and the sales rep did a great job pairing it for flavour with the 'blood orange' flavoured olive oil. This is now my go-to for dipping bread but also as a salad dressing.
