The vinegar is a little on the sweet side and a lot thinner than previous ones I have purchased. A lot of the recent ones I have purchased are similar

Thank you for your feedback and we appreciate your support. When we switched suppliers last year that was the noticable difference for the general line of balsamics. The previous supplier had significant pricing increases and that forced us to make the switch to use the same supplier as the formally known Unrefined Olive. Great taste!! However, after a day in the fridge it turned pretty thick and slightly slimy. It was very hard to get out of the bottle. Shaking hard before use makes it a bit easier, but it would help if it were thinner.
Thank you for your feedback Emma! Balsamic Vinegar and Olive Oil do not need to be put in the refrigerator. It will certainly change the texture. If you keep it in your pantry at room temperature it should come back to normal. We are also in the process of changing suppliers and the new supplier has less grape must in their balsamic so they might be more to your liking.
